June is a busy month for us. It’s my daughter’s birthday, my son in law’s birthday, my grand niece’s birthday, and may very well be when my next grandchild is born too! (His due date is July 4th but I’ll be surprised if my daughter goes into July).
We’re trying to continue planning simple nutritious meals that we can make and serve easily, while making use of leftovers to extend our budget and simplify our meal plans. It’s been pretty hot outside too so we’re definitely making use of the grill or slow cooker where possible (no heating up the kitchen!).
What kinds of meals have you been serving lately?

Grilled beer can chicken, (leftover chicken will be frozen and used at the end of the week for chicken salad), baked potatoes, corn on the cob
Tuesday
Neapolitan layered pasta casserole, Caesar salad, garlic bread
Wednesday
Grilled lamb chops with garlic herb rub, grilled potatoes, Brussels sprouts, carrots
Thursday
Lemonade chicken, rice, squash, broccoli
Friday
Grilled cheese sandwiches, raw veggies with Ranch dip, pickles
Saturday
Slow cooker Apple Bacon Pork Chops, egg noodles, peas, carrots
Sunday
Chicken salad in wraps, German potato salad, coleslaw
