Menu Plan Monday Week of April 16

Well, here we are again at the start of a new week and another Menu Plan Monday. And I need this week to be a super easy one. I spent Friday – well at least several hours on Friday – at the Urgent Care Center. They ran a whole battery of tests, thinking that I had some sort of heart issue going on. I kept hearing the words “enlarged heart” being spoken so I’m glad they took all precautions and made sure it wasn’t really that! Turns out my heart is in “pristine condition” (YAY!) and that they are 95% sure I have labyrinthitis. I have to follow up with my neurologist to make sure it’s not Menieres disease but really the difference between the two from what I understand is short-term dizziness as opposed to permanent dizziness.

If you’re inclined to prayer and you want to send out a few prayers that it’s not Menieres, I’d really appreciate that. All in all though, compared to a heart condition, I’ll learn to live with the dizziness. So, on the meal plan this week are some favorite dinners that are simple to make and don’t take much time. The less time standing in the kitchen, the better! πŸ˜‰

I’m also planning extra simple meals on Saturdays and Sundays so that we truly can take a Sabbath and spend some time focusing on family and fun! 

Monday – Cap’n Crunch Chicken, oven fries, green beans, butternut squash

Tuesday – Maple Mustard Pork Tenderloin, potato salad, carrots, peas

Wednesday – Pizza Quesadillas (cheese, pizza sauce, pepperoni, your favorite toppings), raw veggies and Ranch dip

Thursday – Bacon Wrapped Chicken, baked potatoes, corn

Friday – Meatfree Friday: Asparagus Parmesan Quiche, (MF) Watercress Salad, Fruit Cocktail

Saturday – Super Simple Saturday:  Sloppy Joes, Pickles, raw veggies and Ranch dip

Sunday – Sabbath Sunday:  Pot roast with carrots and potatoes (SC), dinner rolls and butter
