That title should say oh so amazingly tasty, yummier than you can imagine, delicious beyond belief Tuesday because this chicken is all that! I made them for dinner last night but you could certainly cut them into smaller strips or cubes, maybe even put them on a stick, and serve them as hors d’oeuvres at a party! And they’re so freakin’ easy to make!
Ingredients:
1 1/2 lbs. boneless chicken (I used breasts but thighs would be great here too)
About 1/2 lb. of bacon (I used slightly more than 1/2 lb. so that each piece had its own strip of bacon)
For the marinade: 3 T. honey (I used lavender honey because it’s what I had on hand but any will work), 1 T. coarse mustard, the juice of 1 lemon (or about 1 1/2 -2 tablespoons).
Instructions:
Cut chicken into strips. Wrap bacon around chicken. (I didn’t use any toothpicks or anything but if using smaller pieces of chicken you might want to).
Whisk together all the marinade ingredients. Put chicken on a non-stick baking sheet (or use cooking spray) and brush with marinade. Bake at 425 degrees F for about 13-15 minutes, flip over, brush on more marinade, and bake for another 13-15 minutes.
You want the bacon to crisp up without letting the chicken cook so long as to get dried out so keep an eye on it. Oh and do NOT use any leftover marinade (if you have any – I used up all mine) as a dipping sauce. Once you have put your brush into it, then touched the chicken, then back into the marinade it will be unsafe to use for dipping. Make more if you want a dipping sauce and I suggest whipping in a bit of Hellmann’s mayonnaise (my personal favourite) for a creamier dip.
Next day: cut up your leftover chicken with the bacon on it, add in some mayo (Hellmann’s for me of course), and other goodies such as dried cranberries and pecans for a delicious chicken salad!
