Are you “team cake” or “team pie”? Some of our family members seem to like both equally, but when it comes to my daughter and I, we take after my dad. We are firmly Team Pie! Oh, cake is good but even if you offered me some every day, I would only eat it once in a while. Pie – now that’s a different story! It never lasts for very long in our home. My dad loved it so much he even would eat leftover pie as his breakfast!!! Blueberry pie was never one of my favourites though. That is, until I tried these air fryer blueberry pies. Oh. My. Yumminess.  The fact that they are so incredibly easy to make doesn’t hurt either. Don’t care for blueberries? You can make these with pretty much any fruit.

AIR FRYER BLUEBERRY PIES

Ingredients:

1 cups blueberries
1/2 Tablespoon butter
1/4 cup water
1/4 cup sugar

1 can pre-made biscuits

2 Tablespoons oil of choice

Note: you can use blueberry jam or pie filling instead of making your own filling to make it even easier. Try it with different flavours too!

Directions:

Place blueberries, butter, water and sugar in a pot set above medium heat.

Stirring frequently, cook for 8 minutes until the blueberry skins have dissolved and the consistency resembles a loose jam. Remove from heat.

Open the biscuits and roll out each to a 1/4″ thickness.

Add 1 Tablespoon of the blueberry pie filling to the center of the handpies and then fold the sides together to form a crescent shape.

Add the oil to the airfryer and carefully add the mini pies.

Bake for 7-10 minutes, watching carefully.
