Summer Weekly Menu Plan May 28

Well, we’ve had some glimpses of summer and let me tell you, it’s been such a breath of fresh air. Seeing all that sunlight stream in through the windows is a great way to get each day started. I’m looking forward to even more sunny, blue sky days to come. Do you have any plans for the summer? Ours is pretty open. I can think of all kinds of fun things I’d like to do but with a baby in the house and torn ligaments in my knee, I think it’s a good idea to keep things flexible for now. I do know that the beach is calling my name and I keep poring over all of the picnic posts on Pinterest.

Oh and if you need an indoor activity to do, I can recommend the movie Book Club. I was on the fence about seeing it. I am NOT a 50 Shades fan but I love Candace Bergen, Diane Keaton, Jane Fonda, and Mary Steenburgen so I had high hopes. It was funny, it was touching, and it was full of hope. There’s a part near the end with Mary Steenburgen and Craig T. Nelson that even had me tearing up.

Besides the great outdoors, the other thing I am fully ready to embrace is some summertime cooking! I want ALL the salads, all the produce, and all the BBQ’d foods I can possibly get. Yum yum yum! Check out this yummy summer menu plan.

MA – MAKE AHEAD

I’m also planning extra simple meals on Saturdays and Sundays so that we truly can take a Sabbath and spend some time focusing on family and fun!

Monday

Easy Grilled Beercan Chicken with Spice Rub, (make 2 and save leftover chicken in freezer for later this week), Street Corn Pasta Salad, green beans

Tuesday

Basil Butter Burgers, (FF) macaroni salad, baked beans 

Wednesday

Chicken and Watermelon Tacos (PLO) (use leftover chicken from Monday), coleslaw, Mexican rice (make extra rice and leave it plain for Friday)

Thursday 

Coffee Rubbed Steak and Onions, baked potatoes, corn on the cob

Friday

Hawaiian Chicken and Veggie Kabobs, rice (PLO)

Saturday

Slow Cooker Ginger Garlic Ribs, (SC) potato salad (MA), roasted asparagus and carrots

Sunday 

Chicken Cobb Salad (use leftover chicken from Monday), fruit cocktail
