This is going to be a busy week and my menu plan will reflect that. I’m trying to make sure we still have tasty, (somewhat) healthy home-cooked dinners despite the craziness of our schedule (lots of appointments and some fun too – we are going to see Paddington 2 on Wednesday at the Stars and Strollers theater and then have a birthday party on Saturday). I’m feeling rather hygge-ish – wanting cozy comfort food while we hunker down inside. The weather around here has been somewhat frightful – how about for you?
Monday –
Grilled cheese sandwiches, tomato soup, raw vegetables, ranch dip
Tuesday –
Build Your Own Taco Salad Cups, Fruit Cocktail
Wednesday –
Slow Cooker Cranberry Chicken Pot, Brown Rice, Spinach, Carrots
Thursday –
Bacon Cheeseburger Pasta, peas
Friday –
Chicken Stir Fry with Cashews, Broccoli and Cauliflower, Udon Noodles
Saturday –
Out for dinner to a birthday party!
Sunday –
One Pan Zesty Pork Chops and Rice (my sister-in-law Jerri’s recipe), Brussels Sprouts, Carrots

It is a nice menu plan for the week. I like eating rice during cold weather, so I am going to add a bowl of hot cooked rice in every menu.
