Menu Plan Monday: January 8, 2018

Happy New Year! We took a break from meal planning over the holidays but now that Epiphany has passed, I’m back to it. We spent 45 minutes at Supperworks doing some meal prep. With both my daughter and I putting the meals together, it takes us under an hour to get the 12 meals done. Now, obviously, you might not have access to Supperworks but these are simple recipes that are quite quick to put together. You could also spend some time one afternoon or evening doing your own meal prep for your menu plan. It will take a bit more time as you don’t have access to the veggies and other items already being chopped up for you, but it is well worth it.

The key that I’ve always found when doing meal prep on my own is to try to batch what I’m doing and take care of as much as I can assembly line fashion. Cut up enough onions for all of the dishes that require it. I often have several bags or containers laid out in front of me and I portion out a bunch of chicken. Then it’s zip, zip, zip to add some herbs and spices, some oil, and some sort of acid (vinegar, wine, or lemon juice are all common choices for me) to each of the containers. Sometimes I add prepared sauces that I stocked up on when they went on sale instead of making a marinade. BBQ sauce, lemon pepper sauce, or even teriyaki sauce work well.

Sonoma Pork Tenderloin (we also topped this with slices of pancetta), Roasted Potatoes, Corn

Wednesday

Slow Cooker Italian Wedding Soup, Savoury Cheese and Herb Quick Bread

Thursday 

Chicken Schnitzel, Egg Noodles, Carrots

Friday 

Slow Cooker Pot Roast with Sundried Tomato Gravy, Mashed Potatoes, Green Beans

Saturday

  Chicken Quesadillas, Fruit Salad

Sunday 

Herbed Pork Loin Roast, Roasted Potatoes, Carrots, Corn
