Welcome back to another Menu Plan Monday! It’s a special week around here for us. My little Moonpie turns 5 months old, it’s Valentine’s Day and my mom’s birthday. Of course, it’s also Shrove Tuesday and Ash Wednesday and you know what that means! With the start of Lent, I’ll be incorporating meatless meals into the meal plan every Friday from now until Easter.
Monday –
Mom’s Chicken and Rice casserole, green beans, squash
Tuesday –
Shrove Tuesday (aka Pancake Day): Pancakes, sausage, bacon, scrambled eggs, fried apples
Wednesday –
Meatless Meal: Tomato Soup, Grilled Cheese Sandwiches, Raw Veggies and Ranch Dip (Note: no we don’t fast on Ash Wednesday. My daughter is breastfeeding and I have health issues so neither of us are able to. We are observing with a meatless meal and I will be performing some extra acts of service to others in place of the fasting.)
Thursday –
Slow Cooker Meal: Three B Stew (Beef, Bacon, and Beans) from Supperworks, crusty rolls
Friday –
Meatless Meal: Neapolitan Layered Pasta Casserole, tossed salad, garlic bread.
Saturday –
Rosemary Pork Tenderloin with Apple Sauce (from Supperworks), mashed potatoes, carrots, peas
Sunday –
Quesadillas made with leftover roast beef from last Sunday which we put away in the freezer, sliced peaches
