Menu Plan Monday February 29 2016

Oh Spring is just around the corner! Can’t you just feel it? I can hardly wait for all the yummy fresh local produce that is on its way – I can almost taste the asparagus! Here’s my weekly menu plan. Hope you find it helpful.

Sales in London Ontario that I’m Taking Advantage of This Week:

Food Basics – Extra lean ground beef for $2.77 lb, stewing beef for $3.88 lb (holy cow! I am stocking up!), bagels $1.79 for 6, zucchini for 98 cents lb., hamburger buns for $1.88 dozen, Catelli pasta 99 cents a box, arugula $1.98 a package, spinach for 99 cents a bundle

Note: I’m pretty well stocked at the moment and don’t have a lot of storage space left. So, I’m only taking advantage of a few sales that are really really good and making use of items left in my freezer and pantry.

This Week’s Menu Plan:

Monday – Meatless Monday: Spaghetti tossed with lemon juice and olive oil that have been whisked together and topped with arugula and a few pistachios (a little splurge yes, but they go far – walnuts are another good option), tossed salad, garlic toast

Tuesday – Pizza burgers (mix a little pizza sauce, grated mozzarella, and Italian seasoning into the meat) and then top with a little more mozzarella cheese and pizza sauce. Oven fries. Raw carrots, pickles.

Wednesday – Broiled chicken pieces (I like to broil it with a bit of vinegar poured over it.  That keeps it really moist and adds a really great flavour. You can use whatever type of vinegar you’d like but balsamic is my favourite), couscous, zucchini sauteed in a touch of butter, lemon pepper, and soy sauce.

Thursday – Sloppy Joes, carrot sticks, coleslaw

Friday – Meat Free Friday – Sweet Corn Ravioli, sauteed spinach and roasted squash

Saturday – Super Simple Saturday – Tomato soup with tortellini– Cook pasta as per package. For 2 cans of soup, you’ll need about 1 twelve ounce package of cheese tortellini.  Add pasta to each bowl of soup and top with a touch of grated cheese. Spinach salad. Crusty bread.

Sunday – Sabbath Sunday – (Thrown into the slow cooker) Cyn’s World Famous Pot Roast (save leftovers for next week) with carrots and potatoes, peas
