I went ahead and put together a weekly menu plan just to stay in the habit but really, I won’t be home this week! My daughter, grandson, and I are headed to Quebec City for the Women in Travel Summit. We’re staying for a full week so we can really take in the sights. Sam has never been before and it’s been over 40 years for me! My only issue right now is that I’ve been sick with a virus that has caused pneumonia. Ugh. I refuse to skip it and I’m not contagious so it is what it is. Still, I feel like I’ll be that coughing person on the plane that I try to avoid.
My little moonpie had laser surgery this week. Turns out that his mama was right (she has great instincts and research skills!!) and he had both a lip tie and tongue tie. He has been quite a trooper despite the 5 times daily mouth stretches we have to do to prevent it from coming back. Or as we refer to them, his daily torture sessions. It has been heartbreaking! But clearly it’s beginning to heal because he’s able to tolerate it so much better now. Thank goodness!

I’m also planning extra simple meals on Saturdays and Sundays so that we truly can take a Sabbath and spend some time focusing on family and fun!
Monday:
Chicken Parmesan Meatballs and Spaghetti (FF), Caesar salad, garlic bread (freeze leftovers for Friday)
Tuesday:
Pork chops, Spaetzle, peas, carrots
Wednesday:
Pizza burgers (FF) – burgers have a bit of pizza spices, grated mozzarella, and pizza sauce mixed right in. Top with more pizza sauce and cheese after cooking. Oven fries. Coleslaw.
Thursday:
Beer can chicken (put leftovers away in freezer for next week), baked potatoes, corn, spinach
Friday:
Meat Free Friday: Neapolitan Pasta Casserole (MF), tossed salad, garlic bread
Saturday:
Super Simple Sabbath Saturday meal: Parmesan Panko coated chicken fingers (FF), macaroni salad, coleslaw
Sunday:
Super Simple Sabbath meal: Ham and broccoli quiche (FF), fruit cup
