I know for many of us, picnic season is over (hello to those of you out in western Canada already dealing with SNOW!) but when this recipe was sent to me, I tried it out and just had to share it with you. This layered multigrain salad is DELICIOUS! I still carry picnics with me when I take road trips, no matter the time of year, and honestly, this recipe is a great one for me to make up and store in the fridge in the evening so that when the next day rolls around, I have a grab and go lunch all ready! Perfect for those of you who take packed lunches with you too.
Layered Multi-Grain Salad
Serve up layers of goodness in this scrumptious salad, which contains brown rice, quinoa, celery, carrots, edamame, dried apricots, queso fresco and Simply Dressed® Balsamic Salad Dressing.

Cook Time: 75 minutes
Ready In: 110 minutes
Serves: 10 to 12
- 1 to 1 1/4 cups Simply Dressed® Balsamic Salad Dressing
- 2 cups cooked brown rice
- 2 cups cooked red or white quinoa
- Salt and pepper, to taste
- 2 cups chopped celery
- 1 cup grated carrots
- 1 1/2 cup edamame, thawed
- 1 cup chopped dried apricots or dates or a mix of
- 1 cup crumbled queso fresco, goat or feta cheese,
- 4 to 6 cups favorite salad greens
Transfer each grain to a separate bowl. Toss each with 2 tablespoons Simply Dressed® Balsamic Salad Dressing and season each with salt and pepper to taste.
Line up individual large canning jars or choose one large glass bowl and begin to layer the salad as desired. For the large bowl serving option, pour the remaining dressing over the assembled salad and with the aid of chopstick, gently open spaces to allow the dressing to seep into the salad. If using individual jars, place 2 tablespoons of dressing in the bottom of each jar. Leave 1 1/2” open space at the top of each jar. To serve, secure lid and shake the jar to distribute the dressing.
