Fresh Marinated Green Bean Salad

This fresh marinated green bean salad is tasty and oh so easy to make. It’s perfect for picnics, backyard BBQs, and potlucks.

This recipe requires only about 10-15 minutes of preparation time and can be made ahead of time, making it ideal for parties. Serve with any kind of typical picnic and backyard BBQ food and it goes well with pasta dishes too.

Fresh Marinated Green Bean Salad

Fresh Marinated Green Bean Salad

Makes 16 servings. You can obviously cut this down as needed.

Ingredients:

2 lbs. fresh green bean, trimmed (you can also use frozen)

3 cups cherry tomatoes, cut in quarters

1/2 large red onion, chopped

1/4 cup olive oil

2 tbsp balsamic vinegar

2 tbsp lemon juice

1 tsp Worcestershire sauce

1/2 tsp Dijon mustard

1/4 tsp salt

1/8-1/4 tsp pepper

1/2 tsp minced garlic

1/4 tsp brown sugar (optional – taste the dressing first and then add if needed)

Variations: Add 4 oz crumbled feta or goat cheese. Use a mixture of green beans and carrots. Or green beans and wax beans. Add in a can of 6 bean blend.

Instructions:

Steam green beans until cooked but still have a bit of crisp left in them. Place in an ice water bath to stop the cooking process. Drain and pat dry. 

To make the dressing, whisk together the oil, vinegar, lemon juice, Worcestershire, mustard, salt, pepper, and garlic (and brown sugar, if using). Pour over the green beans. Add the onions and toss.

Place in refrigerator for at least an hour to allow the green beans to marinate and the flavors to blend. Add the tomatoes (and cheese if using) and serve.
