Ingredients

  • 2 lbs. fresh green bean trimmed
  • 3 cups cherry tomatoes cut in quarters
  • 1/2 large red onion chopped
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8-1/4 tsp pepper
  • 1/2 tsp minced garlic
  • 1/4 tsp brown sugar optional - taste the dressing first and then add if needed
  • Variations: Add 4 oz crumbled feta or goat cheese

Instructions

  1. Steam green beans until cooked but still have a bit of crisp left in them. Place in an ice water bath to stop the cooking process. Drain and pat dry.
  2. To make the dressing, whisk together the oil, vinegar, lemon juice, Worcestershire, mustard, salt, pepper, and garlic (and brown sugar, if using). Pour over the green beans. Add the onions and toss.
  3. Place in refrigerator for at least an hour to allow the green beans to marinate and the flavors to blend. Add the tomatoes (and cheese if using) and serve.
