Dessert doesn’t get much easier than this. When it’s hot out, the last thing I want to do is to be fussing in a hot kitchen. I love to cook but an overheated Cyn is not a happy Cyn.
I want quick, simple recipes keep the kitchen cool. If they cool us off as we eat them, that’s even better. This Three Ingredient Frozen Key Lime Pie fits the bill!
I love good old fashioned from scratch homemade food. I also think it’s entirely possible to use shortcuts with delicious results.
This recipe uses simple shortcuts to create a yummy summer dessert. Okay, truth be told, I serve this all year-round. It’s just that good!
The key ingredient in this recipe is key lime yogurt. It’s a staple at my local grocery store but I know how fickle those stores can be so if you can’t find it, what can you do?
A simple substitute for the key lime yogurt is: 1.5 tablespoons of sugar, 3/4 tablespoon key lime juice, 1.5 cups plain Greek yogurt, 1.5 teaspoons finely grated key lime zest.
What happens if you can’t find key limes? Try this mixture: 1.5 tablespoons of sugar, 1/2 tablespoon of lime juice, 1/4 tablespoon of lemon juice, 1.5 cups plain Greek yogurt, 1 teaspoon of finely grated lime zest, 1/2 teaspoon of finely grated lemon zest.
Note: I added a tiny bit of green food coloring to this pie to make it a little more vibrant in color. You can omit the food coloring. You’ll simply have a whiter pie.

What is cool whip. Where do you key lime yogurt I’m in Aust.
Cyn Gagen says
Cool Whip is a frozen whipped topping. Key lime yogurt – honestly, here in Canada I can’t always find it anymore either. But any flavor of yogurt will work. This recipe is really yummy with lemon yogurt instead of key lime, for example. If you can find lime yogurt, it would probably be quite good too but may not taste exactly like key lime.

I have never seen key lime Greek yogurt in any store within 50 miles of my house. Would regular full fat Greek yogurt with key lime zest and/or juice work? If so, what amounts?
Cyn Gagen says
A simple substitute for the key lime yogurt is: 1.5 tablespoons of sugar, 3/4 tablespoon key lime juice, 1.5 cups plain Greek yogurt, 1.5 teaspoons finely grated key lime zest. You can also use any flavor of Greek yogurt you would like. Lemon is especially delicious in this recipe and I have tried it with a mandarin orange/pineapple yogurt I have found in my area.

I have used a chocolate crust with these ingredients and sprinkle mini chocolate chips on top.
