Strawberry Jam Cupcakes

These Strawberry Jam Cupcakes are soft, fluffy, and packed with sweet strawberry flavor in every bite.

Ingredients

Strawberry Cake

  • 1 box yellow cake mix
  • 3 eggs
  • ½ cup buttermilk
  • ½ cup water
  • ½ cup strawberry jam

Cream Cheese Frosting

  • 8 oz cream cheese
  • 4 cups powdered sugar
  • ½ cup unsalted butter, room temperature
  • 2 tsp vanilla extract

Garnish

  • ½ cup strawberry jam

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Line a cupcake or muffin pan with cupcake liners and set aside.
  3. In the bowl of a stand mixer, combine the cake mix, eggs, buttermilk, and water.
  4. Mix on medium to high speed until fully combined.
  5. Add the strawberry jam and mix again until incorporated.
  6. Using a large ice cream scoop, fill each cupcake liner about ¾ full with batter.
  7. Bake for 14–16 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow the cupcakes to cool completely.

  3. Frost each cooled cupcake.
