Pie Crust Cookies

For this week’s Summer Fun Friday, I thought it might be fun to do some baking with the kids and make these Mickey Mouse Pie Crust Cookies. When I was little, I used to bake with my mom all the time.

One of my favorite things to do was help her with baking pies. There were inevitably some scraps of dough leftover and that’s when I got really excited. Mom would give me some tiny tart tins and let me create my own mini pies. I’d press the dough into the tin and then fill them with jam or jelly. YUM!

Mickey Mouse Pie Crust Cookies

These pie crust cookies are a take on that same idea as those mini pies I made with my mom. This is such a simple recipe because you only need 2 ingredients. I made them in the shape of Mickey Mouse but there are so many other cookie cutter options that you could use instead.

Ingredients

2 store bought pie crust

Preserves – I used about half of a 17 oz. jar of jam

Mickey Mouse cookie cutter

Instructions

Note: The number of servings you get out of this depends on the size of your cookie cutter and how much preserves you use. We are generally able to get 5-6 servings out of this recipe.

Preheat oven to 375.

Roll out pie crust and cut out Mickey shapes.

You will need two Mickey shapes for each cookie. Cut slits on the top.

On the bottom, spoon on the preserves and add the top piece. Be careful not to overfill.

Around the edge, use a fork to press the two pieces together.

Bake for 15 – 20 minutes. Keep your eye on them.
