I just love sweet potatoes. They are packed with nutrients: calcium, potassium, vitamin A and vitamin C and they taste great! When it comes to sweet potatoes, they are so versatile and can be used not just as a side dish but as the basis for a main dish as well. They are delicious all on their own or you can “jazz” them up any way you’d like.
This is National Sweet Potato Month and so of course, it’s a great excuse to celebrate this under-appreciated vegetable. Far too many people I know only bring out the sweet potato for the holidays but it’s a smart choice all year long.
