This week’s meal plan includes three meat free dinners and the great deals I found on ground beef, beef roast, and whole chicken.
Monday – Sweet Corn Ravioli, spinach salad (leftover spinach for Saturday)
Tuesday – Applesauce Meatloaf, egg noodles, peas, carrots
Wednesday – Roasted whole chicken (leftover chicken is for Saturday)– I like to broil it with a bit of vinegar poured over it. That keeps it really moist and adds a really great flavour. You can use whatever type of vinegar you’d like (balsamic is my favourite). Couscous cooked in chicken broth, green beans sauteed in butter, lemon pepper, and soy sauce.
Thursday –Sloppy Joes, carrot and celery sticks, coleslaw
Friday – Tomato soup with ravioli or tortellini– Cook ravioli as per package. For 2 cans of soup, you’ll need about 1 twelve ounce package of cheese ravioli or tortellini. Add pasta to each bowl of soup and top with a touch of grated cheese. Tossed salad. Crusty bread.
Saturday – Check out 4HatsandFrugal’s Post for ideas on how to stretch a roast chicken into multiple meals. Tonight I’m making chicken fried rice with leftover veggies added, sauteed spinach. Grilled peaches for dessert (I scored a great deal on peaches this week!)
Sunday – Cyn’s World Famous Pot Roast (save leftovers for this coming Tuesday) with carrots and potatoes, green beans
