Welcome back to another Menu Plan Monday!
If you aren’t already meal planning, let me suggest this blog post for you on why I meal plan. I can’t stress enough just how much pressure it can take away and how much money you can save! A weekly menu plan has been a lifesaver for us.
It’s been quite a good week around our house. Everyone is on the mend after all of our passing illnesses back and forth, thank goodness. We celebrated by heading to the movies (Stars and Strollers – a baby friendly movie showing – it’s genius!) and saw I Tanya. I know, I know, but I was interested in seeing how her life was being presented. And we had one of my little Moonpie’s great-grandmas over for a birthday celebration lunch. She’s such a lovely person – so friendly and caring and it’s always wonderful to be uplifted by spending time with her. The big excitement for this week? We’re headed to see Rodger and Hammerstein’s Cinderella.
So, without further ado, here is the meal plan for this week. As always, they are simple, delicious, and budget friendly meals.
Monday –
(By special request, I’ve been asked to make this again) My Mom’s Chili Con Carne recipe, cornbread, fruit cocktail
Tuesday –
Bacon wrapped chicken, roasted potatoes, green beans, corn
Wednesday –
Sonoma Pork Tenderloin (we also topped this with slices of pancetta), egg noodles, peas, carrots
Thursday –
Three Cheese Chicken Penne, salad, garlic bread
Friday –
Jerri’s Zesty Pork Chops and Rice, spinach, carrots
Saturday –
Parmesan chicken fingers (from Supperworks), oven fries (here’s the trick – cut up potatoes and then dip into beaten egg white before baking in a hot 450 degree F oven. This makes them good and crispy on the outside!), coleslaw
Sunday –
Red Wine* Rosemary Garlic Butter Marinated Beef Roast, sweet potatoes and cauliflower cooked with the roast, Yorkshire pudding (*We will be using non-alcoholic wine since my daughter is breastfeeding).
