Menu Plan Monday: Week of February 26

I am doing a happy dance that the month of February ends this week. It’s not my favourite month for multiple reasons but with the end of it, March begins. And that always signifies to me that spring is around the corner. Even if we get snow the entire month of March, I still just feel so hopeful! Other than that, not much has happened around here in the past week, so nothing to tell you about. As in, we’ve been incredibly boring. Hahaha. I told you I dislike February. Now, on to this week’s menu plan:

Meal Plan for Week of February 26 –

Monday –

Tomato soup, grilled cheese sandwiches, raw veggies and Ranch dip

Tuesday –

Sheet Pan Supper: Honey garlic sausage, apples, potatoes, carrots. Drizzle with 2 T. of honey and 2 T. of olive oil. Pop in the oven at 400 degrees F for about 40 minutes. Serve with this sauce: 1/2 cup marmalade (melted), 1 T. soy sauce, 1 T. balsamic vinegar, 1/2 tsp. ginger paste, and 1/2 cup ketchup.

Wednesday –

Stir fried chicken with broccoli and carrots served with Udon noodles.

Thursday –

Basil Butter Burgers (a splurge but oh so good!),  oven fries, coleslaw

Friday –

Meatless Meal: Make your own mini pizzas (my favourite combo is cheese, potato, spinach, sweet potato with a drizzle of olive oil and a drizzle of balsamic vinegar but any vegetarian toppings that you like could be used). Tossed salad.

Saturday –

 Oprah’s Roast Chicken, macaroni salad, leftover coleslaw

Sunday –

 Maple Mustard Pork Tenderloin, baked beans, spinach, cauliflower
