This is going to be a week of simple suppers. We’ve got a busy week ahead and the only thing that will me sane and the family fed is to fill it with really easy meals that can get prepped by anyone of us in a flash. The most complicated meal here on this week’s menu plan is Monday’s meatloaf but it’s Family Day and Presidents’ Day and we all have the day off so we can splurge. I know, I know. To most of you meatloaf might not feel like a splurge but it is a beloved recipe here in our home!
Menu Plan – Week of Feb. 20, 2017
Monday: Family favourite – Meatloaf may get a bad rap but we love it here! (I do a variation on my mom’s meatloaf recipe and the one from Pioneer Woman). Serving it with mashed potatoes and peas.
Tuesday: Pizza – served in the classic manner and the not so classic manner. We have enough frozen dough for two crusts and are going to make one pepperoni and one that is half Hawaiian and half with sweet potato, white potato, goat cheese, and spinach (no pizza sauce). That should satisfy all the picky discerning tastes in our home. Side tossed salad (with this incredibly delicious Creamy Balsamic Dressing) to add some greens to the menu (and sometimes I like tossing some of that salad right on top of my pizza!).
Wednesday: Girls’ Night In – Tomato Soup and Grilled Cheese Sandwiches. A cozy classic from way back, we’re adding some cut up veggies and Ranch dip to round this meal out.
Thursday: Because bacon makes everything better – Bacon Wrapped Chicken, Smashed Potatoes, Sauteed Garlicky Green Beans
Friday: I Surrender Night – We used to have taco salad a lot but trying to get certain members of this family to eat anything green is quite the challenge. They would take all the salad toppings and throw them on top of some tortilla chips instead. So in the spirit of giving in, we’re having build-your-own nachos with taco seasoned meat, black beans, sweet corn, cheese, onions, sour cream, guacamole, and salsa. Fruit salad.
Saturday: The weather has been lovely and we’re craving more. So this meal is a little taste of summer – Lemonade chicken (we prefer it without the mint and I always prep a second batch to go into the freezer at the same time) with roast potatoes and carrots
Sunday: Comfort food to the max – Sausage and pierogies with a side of spinach and baked beans.
