Chicken Fajita Sliders

If you’re anything like me, you’re always looking for quick and easy meals that don’t skimp on flavor—especially during busy weeknights or when you’ve got a hungry crowd to feed. These Chicken Fajita Sliders are one of my go-to recipes when I want something hearty, fun, and packed with Tex-Mex flair without spending hours in the kitchen.

With simple ingredients and minimal prep, these are perfect for game day, family dinners, or even casual get-togethers. Bonus: they’re just as delicious reheated the next day—if you have any left!

Chicken Fajita Sliders

Prep TIme: 18 min (does not include marinating time of 5-6 hours or overnight)

Cook TIme: 28 min

Total TIme: 46 min

Ingredients for These Chicken Sliders:

  • 8 Chicken Thighs, boneless and skinless
  • 2 tbsp. fajita seasoning
  • 2 onion, sliced into small chunks, divided
  • 1 red, yellow, orange pepper, chopped into small chunks
  • 3 avocados, mashed
  • 4 tbsp of cilantro, minced
  • ½ cup Salsa
  • 8 slider buns
  • 1 tbsp. butter
  • 1 tbsp. Tajin Seasoning
  • 1 tbsp. Garlic, minced

Step-by-Step Instructions for Making Chicken Fajita Slider Sandwiches:

Preparing the chicken –

Place the chicken thighs, and ½ of the sliced onions in a large sealable plastic bag ( Ziploc bag )

Add the fajita seasoning to the bag, using your hands rub the seasoning onto the chicken and seal the bag.

Place the bag in the refrigerator for 5-6 hours or overnight.

Place the chicken thighs on a Ninja Griller or a BBQ grill.

Cook until almost done about 15-18 minutes

Set the chicken to the side.

Preparing the onions and peppers –

In a saute pan add the peppers, and onions, cook for 6-8 minutes or until tender.

Set to the side.

Getting the slider buns ready –

Place the top of the slider buns on one baking sheet, and the bottoms on a separate baking sheet.

Preheat your oven to 350 degrees.

In a small bowl melt your butter and add the minced garlic, Tajin seasoning.

Mix to combine.

Brush the Tajin butter mixture on top of the top slider buns.

Place both sets of the slider buns in the oven for 5 minutes.

Make the guacamole –

In a separate small bowl add your avocados and mash into a chunky mixture.

Scoop mashed avocado onto the bottom of each slider bun.

Place the chicken thigh on top of the avocado, lightly press the chicken into the mashed avocado.

Add 1 tbsp of salsa on top of each chicken thigh.

Add the pepper onion mixture on top of the salsa fajita chicken.

Sprinkle with minced cilantro.

Place the top portion of the slider bun on top of the pepper mixture and serve.

These Chicken Fajita Sliders are perfect for tailgating, watching the big game at home, a backyard party, or really any occasion. Our chicken sliders have been inspired by Mexican flavors using fajita seasoning and toppings. The Tajin seasoning adds an extra little punch to the flavors.
