Prep time: 10 minutes
Cook time: 15 minutes
Serves: 6-8
Ingredients:
tortilla chips
black or pinto beans, rinsed and drained
cheddar cheese, shredded
salsa (try our homemade salsa recipe)
sour cream
frozen corn, defrosted
black olives, sliced
scallions, thinly sliced
fresh parsley, roughly chopped
Salt and black pepper, to taste
Other ideas for toppings: Try a variety of cheeses, use red or sweet onions instead of scallions, use a lime crema in place of the sour cream, use a variety of different kinds of beans, chop up some pepperoni and add that, cook ground beef and/or sausage and use that as one of the toppings. What else can you think of to add?
Directions:
Preheat the oven to 375° F. Line a rimmed baking sheet with a piece of parchment paper.
Place the tortilla chips on the prepared baking sheet and evenly top with beans and cheese.
Lightly season with salt and pepper, if desired. We add pepper but find it salty enough as is.
Bake until the cheese melts and is bubbly, approximately 10-15 minutes.
Remove the nachos from the oven and top with homemade salsa, sour cream, corn, olives, scallions, and parsley.
Serve family-style and enjoy!
