Rainbow Oreo Brownies

There’s something about colorful desserts that always makes my family smile—especially when Oreos and brownies are involved! These Rainbow Oreo Brownies are one of our favorite treats to whip up for birthday parties, Pride celebrations, St. Patrick’s Day, or even just a rainy day pick-me-up.

These rainbow treats are bright, chewy, chocolatey, and so easy to make—perfect for when you want a dessert that’s as fun as it is delicious. I love adding a pop of color to everyday treats, and these brownies are just the thing!

Rainbow Oreo Brownies

Did I ever tell you about how special Oreos are to my family? They were a favorite treat when we were growing up, but it was my dad who loved them the most. In fact, he even had his own Oreo-shaped cookie jar that he kept beside his chair in the family room!

Ingredients:

Oreo Brownie layer

1 cup unsalted sweet cream butter, softened

4 cups semisweet chocolate chips

1 cup sugar

4 large eggs

3 tsp pure vanilla extract

1 ½ cups flour

¼ cups Hershey baking cocoa

½ tsp kosher salt

24 Oreo cookies

Chocolate Chip Rainbow Cookie Layer

1 cup unsalted sweet cream butter, softened

1 cup sugar

½ cup light brown sugar, packed

2 tsp pure vanilla extract

2 large eggs

1 tsp kosher salt

1 tsp baking soda

3 cups flour

2 cups semi sweet chocolate chips

Red, Orange, Yellow and Neon Green gel food coloring

Directions

Preheat oven to 350 degrees and spray a 9×13 baking dish with pam baking spray

Start with making the brownie layer first

Using a medium bowl, whisk the flour, cocoa powder and salt until combined

Using a microwave safe bowl, melt the butter and 3 C semi sweet chocolate chips on 45 second increments, just until melted.

Stir until smooth

Allow the chocolate mixture to cool for about 5 minutes

Whisk in the sugar until combined

One by one, whisk in the eggs until combined

Whisk in the vanilla extract

Gradually mix in the dry ingredients until combined and smooth

Fold in the last cup of chocolate chips

Spread the brownie batter into the baking dish evenly

Place 24 oreo cookies into an even row on top of the brownie batter

Set aside while you make the rainbow layer

Chocolate Chip Rainbow Cookie Layer

Using a standing mixer with a paddle attachment, beat the butter, sugar and light brown sugar until light and fluffy

Beat in the eggs, vanilla, salt and baking soda until combined

Gradually beat in the flour until a soft dough forms

Gently fold in the chocolate chips

Evenly divide the chocolate chip batter up between the four bowls

Mix in a few drops of red into one of the bowls. Repeat with each of the other colors in separate bowls.

Starting with the red cookie dough first, scoop out about 3 tbsp of dough

Press the red dough gently on top of the Oreos and into a even thin line

Repeat the steps with the orange, yellow and green cookie doughs. You want these four colors to be in even straight rows of color.

Once you have your colored dough in straight rows, place the baking dish into the preheat oven and bake for 30-35 minutes or until a toothpick comes out clean

Allow to cool before cutting into bars.
