Apple Peach Chutney

Ingredients:  7 apples (about 3 lbs.) – they suggest using Golden Delicious, peeled, cored, and chopped

2 cans (15-16 oz. each) sliced peaches in extra-light syrup, drained, slices cut in thirds

2 jars (15 oz. each) whole onions, drained

1 ½ cups packed light brown sugar

1 cup cider vinegar

1 cup raisins

1 tsp. each ground cumin, ginger, cinnamon

Directions:  Bring all ingredients to a boil in a large pot.  Boil gently, uncovered, about 1 hour, stirring occasionally until thickened.  Cool slightly (mixture will continue to thicken as it cools).  Pour into jars, cool, cover, and refrigerate.
