Slow Cooker Baked Apples

These baked apples have a delicious cider butter sauce.  Makes a yummy breakfast served with yogurt or a delightful dessert when served over ice cream!

Ingredients:

6 apples

1/2 cup packed brown sugar

1/2 cup chopped dried cranberries or raisins

1/2 tsp. cinnamon

1/4 tsp. grated nutmeg

1/2 cup apple juice or cider

2 T. butter, melted

2 tsp. cornstarch

Directions:  Core each of the apples but don’t go all the way through to the bottom.  If you need to, cut a thin slice off the bottom of the apples to make them level.  At the top of the apple, remove a quarter inch strip of peel around the opening at the top.  Stir together the brown sugar, dried fruit, and spices in a bowl.  Fill the apples with this mixture and place them in the slow cooker.  Whisk together the juice and the butter and pour this over the apples.  Cover the slow cooker and set to low.  The apples take approximately 3-4 hours to cook (they are done when soft and all wrinkly).  Baste the apples several times while cooking.  Remove apples from slow cooker and keep warm while making sauce.  Whisk the cornstarch with 1 T. cold water (personally I like to put it in a shaker and shake it up rather than whisk it) and then whisk this into the juices in the slow cooker.  Cover this and turn the heat up to high.  Cook for about 15 minutes until the sauce has thickened.  Makes 6 servings
