Meatless Meal Day 5: Lentil Burgers: Two Different Takes on Them

Lentil Burgers

Ingredients:

2 cups cooked lentils
1/2 cup bread crumbs
1/4 cup ground flaxseed
3/4 cup rolled oats
1 medium carrot, grated
1/4 cup minced onion
1/4 cup minced celery
1/3 cup water
1 tsp. Worcestershire sauce or soy sauce
1 tsp. garlic powder
1/4 tsp each salt and pepper

Instructions: 

Using a fork or a potato masher, mash up the lentils and then mix in the remaining ingredients.  Shape into patties and put in the refrigerator for about half an hour.  This helps them to hold their shape better when cooking them.  Fry the lentil burgers in a little olive oil in a skillet over medium high heat until they are golden brown.  Serve with your favourite burger toppings on buns of your choice.

Lentil-potato Burgers

Ingredients:

2 cups cooked lentils
1 cup mashed potatoes
1 cup bread crumbs (you can substitute some ground flaxseed and/or some rolled oats for some of the bread crumbs if you’d like)
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup finely chopped nuts like almonds, walnuts, cashews, or pecans
1 minced garlic clove
1 medium onion, minced
Note: If I have some leftover veggies like peas, carrots, corn, or even some beans and so on, I like to add some to these burgers.
Herbs of your choice such as basil, parsley, oregano
Salt and pepper to taste

Instructions:  Mash up the lentils with a fork or potato masher and mix together well with the potatoes.  Add in the remaining ingredients.  Form into patties and cook over medium heat in some olive oil until golden brown, about 5 minutes per side.  Serve with your favourite burger toppings on buns of your choice.  Either of these lentil burgers are also really delicious in pita pockets as well.
