Shortbread cookies are my all time favourites! I try not to make them too often because I could seriously just wolf down an entire batch all on my own. I first tried the store-bought kind. Imported from Scotland, I thought I was being all posh and old-fashioned and Christmassy by eating them.

Then came the first Christmas with my step-mom. She made these super soft, melt in your mouth, oh so buttery and delicious shortbread cookies – sigh. I thought they were pretty much the best tasting things ever.
