Pizza Potatoes

Did you know that this is National Pizza Week?  Now, I figure most pizza recipes are pretty much following the same template.  You make the crust whether thick, thin, or deep dish, and then add your chosen toppings.  I prefer no sauce and I know someone who gets theirs with no cheese! Or you can make something different like this Pizza Potatoes recipe.

This is a recipe my mom used to make for us when I was growing up and it’s a favorite of mine.  Don’t let it deter you because it’s made using instant scalloped potatoes. 

It’s “dressed up” enough that I find it doesn’t taste like instant.  OR you can, of course, make your own homemade scalloped potatoes and add these additional ingredients to it for delicious results as well.

PIZZA POTATOES RECIPE

Ingredients:

A pkg. of instant scalloped potatoes

One can tomatoes (16 oz.) or 1 can tomato sauce (I can’t eat actual tomatoes so I use the sauce)

1 1/2 cups water

1/4 to 1/2 tsp. oregano (I like to add some basil to this too!)

4 oz. pepperoni slices

4 oz. shredded mozzarella cheese

Directions:

Place the potato slices from the scalloped potato mix in an ungreased casserole dish.  Sprinkle the contents of the packet of seasoned sauce over it.

Heat the tomatoes/tomato sauce, water, and spices to boiling and stir this into the potato mixture.  Place the pepperoni or other meat on top and top with cheese.  Bake uncovered for 30-35 minutes at 400 degrees F.  Makes about 4 servings.

Variation with homemade scalloped potatoes:

I found the easiest way was to make my scalloped potatoes the way I usually did. To that, I added the tomatoes/tomato sauce and then topped with pepperoni and cheese. Bake uncovered following the directions for your scalloped potatoes recipe.

Other pizza toppings to try:

Any kind of meats you would normally put on pizza could be put on this pizza potatoes recipe too. Ground beef is quite tasty! You can try a combination of cheeses other than just mozzarella. This is really good with some goat cheese added.

Onions, green peppers, and mushrooms are other possible additions. With vegetables like broccoli, cauliflower, and peas, we found it better to mix them in, rather than just putting them on top. We have never tried pineapple with this but if you do, I’d love to hear how it turns out!
