Greek Pasta Salad Recipe

There are so many different varieties of pasta salads to choose from. I love the flavor of a Greek Salad and this Greek Pasta Salad is a lighter version. It’s nicely coated in a dressing and it’s full of flavor with cucumbers, tomatoes, feta cheese, and more.

This is a quick and easy salad to make. You can even make it ahead – in fact, it tastes even better after being in the fridge overnight since the flavors all meld together.

Easy Greek Pasta Salad

This is such a great dish to prep ahead. It’s easy to make and is packed with flavour. It’s always a hit every time we serve it. 

Prep time: 7 minutes

Cook time: 8 minutes

Makes 12 servings

Ingredients:

16 oz pasta – I prefer to use penne, rotini, bow ties, or even macaroni

2/3 of an English cucumber, cut into chunks (use more or less as desired)

1 pint cherry or grape tomatoes, cut in half or quarters depending on size

1/2 cup black olives (I generally throw in a bit more because I love them so much. Leave them whole or slice as desired.)

1/2 cup feta cheese, you can cut in cubes or use it crumbled

1/3 -1/2 cup red onions, sliced or diced

Dressing:

1/3 red wine vinegar

1/2 cup olive oil

2 tbsp lemon juice

1 tsp garlic (you can cut this back or increase it a bit if you’re not as big a fan of garlic as I am)

1 tsp oregano

Optional: Add 1/2 tsp Dijon mustard

Salt and pepper to taste

Instructions:

Cook the pasta according to the package instructions. Drain and rinse under cold water. 

Whisk all of the salad dressing ingredients together. 

Combine pasta and other salad ingredients in a bowl. 

Pour over the dressing and toss gently. 

You can serve right away but the flavors will meld together even more in the refrigerator.
