Chicken Satay on Skewers

I first had chicken satay on skewers at a cocktail party I attended in honor of my mom being given an award for her volunteer work in our local schools. The evening was fun and the food was delicious. I had never had chicken in a peanut sauce before, but it made such an impression that I’ve been making it ever since.

This is such a simple recipe and it’s a family friendly meal that even our picky eaters love. In fact, it’s such an easy meal to make that we get the kids involved in preparing it. You can cook these chicken skewers in the oven or on your grill.

I found that this chicken satay recipe pairs beautifully with these mojitos!

Chicken Satay on Skewers

Take note that some satay recipes are quite spicy. This one, in my opinion, has a mild but flavorful taste to it. It’s easy to add some chili paste or curry paste to the sauce if you prefer something with more of a kick to it.

Ingredients:

1 lb. boneless chicken cut into strips

1 tbsp sesame oil

1 tbsp olive oil

1/4 cup soy sauce

2 tbsp lemon juice

1-2 tsp. grated or minced ginger (I use 2)

2 tbsp rice vinegar

1 tbsp ketchup

1/3 cup peanut butter

1/2 tbsp brown sugar

1 tbsp balsamic vinegar

Instructions: 

Thread the strips of chicken onto bamboo skewers. 

Mix the remaining ingredients together. 

Place the chicken in a baking pan and pour the sauce over. 

Bake in a 375 degree F oven for about 15-20 minutes, until the chicken is cooked through.

How to Serve Chicken Satay Skewers

These skewers pair really nicely with mojitos or your favorite iced tea. We love to serve them with rice or noodles (Udon are our favorite with these) and broccoli, green beans, or carrots.
