These Peeps cupcakes are simply adorable but that doesn’t mean they’re complicated to make. Follow the simple instructions for making the cupcakes and frosting and turn basic cupcakes into WOW cupcakes with some premade decorations that turn them into nests for super cute Peeps chicks.
Peeps Birds Nest Cupcakes
Makes: 12 cupcakes
Cook: 22 Minutes
Prep: 30 Minutes
Ingredients:
For Cupcakes:
1 2/3 cup all-purpose flour
1 cup granulated sugar
1/4 teaspoon baking soda
1 1/2 teaspoon baking powder
1/4 teaspoon kosher salt
3/4 cup unsalted butter; softened
3 egg whites room temperature
1 tablespoon vanilla extract
1/2 cup sour cream
1/2 cup whole milk
For Frosting and Decorations:
1 tablespoon vanilla
2 cups confectioner’s sugar
1 cup unsalted butter; room temperature
1 tablespoon heavy whipping cream
12 Peeps chicks
12 milk chocolate candy eggs
3 packages edible grass (green)
Instructions:
For Cupcakes:
Preheat oven to 350 degrees F. Place paper liners in a cupcake pan.
Sift the flour, sugar salt, baking soda, and powder into a large bowl, and whisk together.
Separate the eggs. In another bowl, whisk together the wet ingredients until combined. The batter will be lumpy.
Add the wet ingredients to the dry ingredients. Mix until combined.
Distribute the batter evenly into cupcake papers, filling each paper with about 2/3 the way up.
Bake for about 22 minutes or a toothpick comes out clean.
For Frosting:
Whip the butter and salt for about a minute using a stand mixer fitted with a paddle attachment.
Sift in the confectioner’s sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process.
Add a tablespoon of the cream while mixing on low then add the vanilla. Beat until you have an even, fluffy consistency.
Pipe white frosting onto the cupcakes.
Pull some edible grass from the pack and roll and set it on top. Place the Peeps chick and an egg on top of the edible grass.
