Asian Cabbage Salad with Spicy Peanut Dressing

You know, I love salad anytime of the year but I get tired of the same old kind all the time. So, I like to switch things up. This Asian Cabbage Salad is a great change from the usual. The warm spicy peanut dressing really takes it to the next level.

Not only is this a great side dish for pretty much any meal, but it’s perfect for a plant-based main dish for lunch or dinner, or to take to a potluck. My friend Marnie used to serve this at every get-together and we all requested the recipe!

Asian Cabbage Salad with Warm Spicy Peanut Dressing

The perfect plant-based main or side dish, this Asian Cabbage Salad with Warm Spicy Peanut Dressing is a refreshing change from the usual. Great to take to potlucks!

Ingredients

Spicy Peanut Dressing Ingredients:

  • 1/2 cup all-natural peanut butter
  • 3 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp sriracha sauce
  • 3 tbsp tamari Or substitute coconut aminos
  • 1.5 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp fresh ginger finely minced
  • 2 cloves garlic finely minced
  • 1/4 cup liquid from Mandarin oranges

Salad Ingredients:

  • 4 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 2 large carrots shredded
  • 1 medium red bell pepper sliced thin
  • 2 green onions (green parts only), sliced
  • 1/4 cup fresh cilantro leaves chopped
  • 1/4 cup toasted peanuts chopped
  • 1 10 oz can Mandarin oranges (packed in juice)
  • 1 tbsp sesame seeds

Instructions

For the dressing:

  1. Combine the peanut butter, vinegar, sesame oil, and sriracha sauce in a medium skillet over medium heat. Season with salt and black pepper, to taste, and heat, stirring continually, until the peanut butter melts and the ingredients are thoroughly combined, approximately 2-3 minutes.

  2. Reduce heat to low and whisk in remaining dressing ingredients until combined. Simmer, stirring occasionally, until heated through, approximately 2 minutes. Remove from heat and set aside. Keep warm. 

For the salad:

  1. Combine shredded green cabbage, red cabbage, carrots, bell pepper, green onion, and fresh cilantro in a large bowl. 

  2. Season with salt and black pepper, to taste, and drizzle with a small amount of the warm peanut dressing. Toss to combine. 

  3. Transfer salad to a decorative serving platter and top with chopped peanuts, Mandarin oranges, and sesame seeds. Serve immediately with remaining peanut dressing on the side. Enjoy!

This salad is absolutely delicious! It’s a lovely accompaniment to a summer backyard BBQ or on a picnic. Traditional coleslaw is yummy but when you want to switch things up, give this Asian inspired coleslaw a try!
