Roasted Pumpkin Seeds 3 Ways

Did you save your pumpkin seeds when you carved your Jack O’Lantern?  I sure hope so! They are SO delicious. Here are 3 great ideas for roasted pumpkin seeds.

I honestly think that one of the BEST parts of carving pumpkins is the pumpkin seeds. Freshly roasted pumpkin seeds right out of the oven are just such a special and delicious treat. I love them just as they are but it can be fun to add some special seasoning blends to them too.

ROASTED PUMPKIN SEEDS 3 WAYS:

3 ways to enjoy roasted pumpkin seeds

Sweet and salty pumpkin seeds:

Per 1/2 cup of pumpkin seeds, add 1/2 tsp. of oil, 1 tsp. of melted butter, 2 tsp maple syrup, 1/2 tsp cinnamon, 1/4 tsp. nutmeg, a pinch of sea salt – 2 servings. Calories per serving: 234

Savoury Italian pumpkin seeds:

Per 1/2 cup of seeds, add 1/2 tsp olive oil, 3-4 tsp. grated Parmesan, 1/2 tsp Italian seasoning, sea salt and fresh cracked pepper to taste – 2 servings. Calories per serving: 223

Asian flavoured pumpkin seeds: 

Per 1/2 cup of seeds, add 1/2 tsp sesame oil, 1/2 tsp ginger, 1/4 tsp soy sauce – 2 servings. Calories per serving: 199

Instructions:

Simply toss the pumpkin seeds and other ingredients for each batch together. Spread the seeds on a baking sheet (nonstick or sprayed with cooking spray). Bake in a 300 degree F oven for about half an hour until golden brown and crispy.
