A different but oh so tasty take on meatloaf! My sister used to make this all the time when I lived with her and I was always asking for it again. Now, this Applesauce Meatloaf Recipe is a family favourite with my own family.
Ingredients:
1 cup soft bread crumbs
1 cup applesauce
1 lb. ground beef
1 lightly beaten egg
¼ cup minced celery
2 T. minced onion
salt and pepper
1 T. brown sugar
1½ tsp. vinegar
1½ tsp. Dijon mustard
Instructions: Combine the bread crumbs and ½ cup of the applesauce. Add the beef, egg, celery, onion, 1 tsp. of the mustard, and the salt and pepper. Mix together well. Shape this into a round loaf and place in an 8 by 8 inch pan. Use a spoon to make a crater-like depression in the top of the loaf. Combine the remaining applesauce, brown sugar, vinegar, and the ½ tsp. of mustard. Pour this sauce into the depression. Bake at 350 degrees F for 1 hour.
