Make Your Own Poultry Seasoning

When it comes to making spice blends, whenever possible, I prefer to make my own. This Poultry Seasoning is no exception.

By making your own, you can ensure that you use the freshest of ingredients. In addition, you can customize the blend to your own preferences.

Make Your Own Poultry Seasoning

This is so easy to make and to customize it just the way you prefer. Want to add some paprika? Go ahead! Not so fond of rosemary? Leave it out! It’s so easy to do when you make it yourself.

I suggest starting with the blend I have here. Make a small quantity and try it. Then you can start changing the proportions. This works beautifully with any kind of poultry.

Note: I don’t add salt to my poultry seasoning. I like more flexibility when it comes to putting salt in my food (or not).

You might be surprised by the nutmeg. Many people will leave it out without even trying it, but I urge you to try it first and then increase/decrease as desired. It can really bring out the flavors of the other spices.

How long will the seasoning blend last?

You obviously want to begin with the freshest herbs and spices possible. In general, herbs and spices don’t “go bad” but they do begin to lose their flavor.

I’m pretty sure my mom had a tin of poultry seasoning in the cupboard that had been through at least 10 years of Thanksgiving and Christmas celebrations, with a few fried chicken meals in between.

For best results though, bear in mind that while spices will retain their flavor for 2-4 years, dried herbs generally last for only 1-2 years.

It’s a good idea to make your spice blends in portions you know you will use up in that time. Or make extra and give some away as gifts!

Variations:

The recipe below is a classic poultry seasoning. I often also use it as the basis for many of my other custom spice blends and rubs.

If you would like to make some changes to it, the following are some herbs and spices that work well with it: paprika, garlic powder, onion powder, basil, oregano, and for a bit of a kick, try adding in some red pepper flakes.

  • 2 tsp sage ground
  • 1.5 tsp thyme ground
  • 1 tsp marjoram dried
  • 1 tsp rosemary dried
  • 0.5 tsp nutmeg ground
  • 0.5 tsp black pepper ground
