There are mornings when a cozy, no-rush breakfast just makes the day but actually making breakfast in the morning? That’s another story. This Make Ahead French Toast Casserole is one of my favorite make-ahead recipes because it lets you enjoy that warm, cinnamon-y comfort without having to stand at the stove flipping slices of bread.
Everything is prepped the night before (or even just a few hours ahead). When you’re ready to eat, you simply pop it in the oven and let the kitchen fill with the smell of vanilla and cinnamon. It’s perfect for holidays, birthday breakfasts, or any morning that needs a little boost of cozy.

Easy Make Ahead French Toast Casserole
Ingredients
- ½ loaf French bread
- 6 eggs
- 1 ½ cups milk
- ½ cup brown sugar
- ½ cup butter
- 2 teaspoons cinnamon
- 1 tablespoon vanilla bean paste – How to Make Homemade Vanilla Bean Paste

Instructions
This is a make-ahead recipe that needs to chill overnight or for at least a few hours.
Cube the French bread into 1–2” pieces.

In a saucepan, melt the butter and brown sugar together over medium heat.


In a bowl, whisk together the eggs, milk, cinnamon, and vanilla bean paste.

Grease or spray a pie dish or casserole dish. (A larger casserole dish may allow you to use closer to a full loaf of bread.)

Pour the melted butter and brown sugar mixture into the prepared dish.

Add the bread cubes on top.

Pour the egg mixture evenly over the bread. Toss gently so every piece is coated.


Cover and refrigerate for at least 4 hours, or overnight.
Bake at 350°F for 30–45 minutes, or until the bread is baked through and no longer soggy.

Note: Cooking time varies depending on how much bread and milk you use, the type of bread, and your oven. Begin checking around the 30-minute mark. If the bottom seems soggy, you can carefully flip portions of the casserole with a spatula and continue baking for an additional 10-15 minutes.

- Use day-old bread. It soaks up the custard beautifully.
- Try brioche or challah for an extra-soft texture.
- Add chopped pecans, sliced bananas, or berries before baking for extra flavor.
- For a slightly caramelized top, sprinkle turbinado sugar over the bread before baking.
- Try using a different kind of milk for a different flavor (almond milk, for example). We have even used leftover eggnog for it before!

Yes—challah, brioche, or Texas toast all work beautifully. Softer breads may need a bit less milk.
How can I make it less sweet?
Use slightly less brown sugar or serve with fresh fruit instead of syrup.
Can I freeze this?
Yes! Assemble but don’t bake. Cover tightly and freeze up to 2 months. Thaw overnight in the fridge, then bake as directed.
What if my casserole is still soggy?
Bake longer, gently flip sections, and give it another 10–15 minutes. Bread type and thickness can change bake times.
