I’ve been making this recipe for over 25 years now and for good reason. This Chicken Lasagna recipe is positively scrumptious! I like the change from the typical Italian food with red meat and tomato-based sauces. Instead, this one has chicken, spinach, and a delicious white sauce in it.
Don’t let the long list of ingredients intimidate you. It’s a simple recipe to put together. As with many lasagna recipes though, this one is a bit labor intensive. So I always double it when I’m making a batch. It’s very freezer friendly and I just pop the second one in the freezer for another meal.

One way you can speed things up when making this is by making the chicken ahead of time. I often roast several chickens at once to have the extra chicken meat on hand for other recipes.
You can also just poach a bunch of chicken pieces in a pot on a weekend afternoon. Cut it up or shred it. Put some in the fridge and some in the freezer and you’re good to go for a bunch of meals, not just this one.

Do take note of the fact that you do NOT cook the lasagna noodles ahead of time. They will cook just fine as the whole recipe bakes as long as you make sure that the noodles are covered completely with the cheese sauce/cottage cheese.
This is a great time-saving step and if you’re anything like me, those fiddly cooked lasagna noodles can be such a pain to work with! Is it just me? I find they just break and tear apart so easily. I’d much rather have a recipe where no pre-cooking is needed.
Chicken Lasagna Recipe
A delightful recipe that has long been a family favorite. Perfect for a dinner party too. I like to serve the chicken lasagna along with a traditional lasagna, some Caesar salad, and garlic bread. It’s always been a big hit!
Variations on this recipe:
It’s really easy to change this recipe up to suit what you have on hand or the ingredients you prefer. You can leave out the vegetables entirely, but it’s also delicious with spinach, broccoli, zucchini, or kale added to it. Got leftovers? Try mixed vegetables!

Chicken Lasagna Recipe
A delicious chicken lasagna recipe made with chicken, cheese, spinach, and a white sauce that is to die for.
Ingredients
- 1/2 cup butter
- 2 cloves garlic
- 1/2 cup flour
- 1 tsp salt
- 2 cups milk
- 2 cups chicken broth
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 medium onion chopped
- 1 tsp basil
- 1/2 tsp oregano
- 1/4 tsp pepper
- 8 oz lasagna noodles uncooked
- 2 cups cottage cheese
- 2 cups chicken cooked, cut up or shredded as is your preference
- 20 oz frozen spinach thawed, well drained
- 1/2 cup grated Parmesan cheese
Instructions

Melt the butter in a sauce pan over low heat.

Add garlic, flour, and salt, stirring constantly until the mixture is bubbly.

Gradually stir in the milk and chicken broth, continuing to stir constantly.

Bring to a boil. Mixture should begin to thicken.

Add the mozzarella, 1/2 cup Parmesan, onion, basil, oregano, and pepper.

Continue cooking over low heat, stirring until cheese melts.

Spread 1/4 of this cheese sauce in a 13 x 9 ungreased baking dish.

Lay on 3-4 lasagna noodles. You can overlap as needed.

Top the noodles with half of the cottage cheese.

Add another layer of 1/4 of the cheese sauce, 3-4 noodles, and the rest of the cottage cheese.

On top of the cottage cheese, spread out the chicken and spinach.

Add another layer of 1/4 of the cheese sauce, the last of the noodles, and finally, the last of the cheese sauce.

The final touch to this culinary masterpiece is to sprinkle on 1/2 cup of Parmesan.

Bake uncovered at 350 degrees F for about 35-40 minutes, until the noodles are cooked. Allow to stand 15 minutes before cutting and serving.
Recipe Notes
You can use ricotta cheese in place of the cottage cheese if you prefer.
