This One Pan Zesty Pork Chops and Rice recipe came from my sister-in-law Jerri. I lived with her and my brother for half a school year while attending college and she made this dish often. It’s quick, easy, and economical to make. I have yet to meet anyone who doesn’t like it or ask me for the recipe!
When I had my own family, this was on our regular meal rotation and quickly became a family favourite. Cooking it all in one pan means that even the cleanup is simple and convenient! Give this easy one pan recipe a try. It’s perfect for those crazy busy nights when you think you just don’t have time to get dinner on the table.
One Pan Zesty Pork Chops and Rice Recipe
Ingredients:
1 medium onion, chopped
1/2 cup celery, minced (note: you can just chop it but I am not fond of a really obvious celery taste so I mince it instead)
2 T. oil
4 pork chops
salt and pepper to taste
1 1/2 cups water
2 T. brown sugar
16 oz. tomato sauce
1 cup uncooked rice (not instant)
Instructions:
Saute the onions and celery in the oil until softened and translucent.
Add the pork chops and cook until brown on both sides.
Remove the chops and add the water, brown sugar, salt, pepper, and 3/4 of the tomato sauce to the skillet. Bring this to a gentle boil.
Add the rice and stir. Put the chops back into the skillet with the rice mixture.
Pour the rest of the tomato sauce over the top of the chops and rice.
Cover the skillet and turn the heat to simmer. Simmer for 15-20 minutes until the rice is done.
See? Easy peasy recipe that takes very little time. Even on your crazy busy nights, you can have dinner on the table in 30 minutes or less.
