Chicken Satay on Skewers

This chicken satay on skewers is such a simple recipe and it's a family friendly meal that even our picky eaters love. In fact, it's such an easy meal to make that we get the kids involved in preparing it. You can cook these chicken skewers in the oven or on your grill.

Ingredients

  • 1 lb. chicken cut into strips
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 tbsp lemon juice
  • 2 tsp. grated or minced ginger
  • 2 tbsp rice vinegar
  • 1 tbsp ketchup
  • 1/3 cup peanut butter
  • 1/2 tbsp brown sugar
  • 1 tbsp balsamic vinegar

Instructions

  1. Thread the strips of chicken onto bamboo skewers. 

  2. Mix the remaining ingredients together. 

  3. Place the chicken in a baking pan and pour the sauce over. 

  4. Bake in a 375 degree F oven for about 15-20 minutes, until the chicken is cooked through.

Recipe Notes

Take note that some satay recipes are quite spicy. This one, in my opinion, has a mild but flavorful taste to it. It's easy to add some chili paste or curry paste to the sauce if you prefer something with more of a kick to it.
