Grilled Fruit Kabobs

These grilled fruit kabobs are a fantastic way to end any summertime meal. Take advantage of all the fresh, in-season fruit and turn them into a dinnertime treat.

Ingredients

  • 1 cup balsamic vinegar
  • 1 T. brown sugar
  • 6 cups of fruits of your choice – ones that will skewer well – peaches apricots, plums, strawberries, bananas, pineapple, watermelon, star fruit, apples, and pears are great choices for this – cut into appropriately sized pieces
  • 1 T. olive oil
  • salt and pepper to taste

Instructions

  1. Heat grill to medium high.  If using wooden skewers, you should soak them in water for an hour before using.
  2. In a pan, combine balsamic and sugar – bring to a boil and then lower heat to a simmer for about half an hour.  It should be reduced to about 3 tbsp.
  3. Skewer the fruits.  Brush each kebab with oil and season with salt and pepper.
  4. Grill for about 1 minute on each side.  Serve with a drizzle of the balsamic syrup.
