Ingredients
1lb.lean ground beef
1/2cupsweet oniondiced
4-5red potatoessliced
1teaspoonminced garlic
1/2teaspooncumin
1can dark kidney beansdrained (14.5 oz)
1can diced tomatoes14.5 oz
1bag frozen corn10 oz
1tablespoonCholula hot sauce
1teaspoonsea salt
1/2teaspoonblack pepper
1cupcheddar cheesesharp
½cupbeef broth
Instructions
Brown ground beef on the stovetop. Once almost done, add diced onions and cook until soft. Drain an excess fat.
In a 6 quart slow cooker, add cooked beef & all ingredients EXCEPT the cheese. Stir ingredients well to evenly distribute spices. Once done, Cover and cook on high for approximately 3 to 3 1/2 hours, or until potatoes are tender.
Remove lid, and sprinkle cheese on top. Cover with lid and cook for an additional 20 minutes, or until the cheese has melted.
