Homemade Tomato Salsa

When your garden is bursting with fresh tomatoes, take some and turn it into this delicious homemade tomato salsa. Options for canned tomatoes too.

Ingredients

  • 4 medium ripe tomatoes cored and seeded
  • 2 - 3 cloves garlic peeled
  • 1 fresh lime about ¼ cup of juice

Instructions

  1. Cut 3 of the tomatoes into quarters and place in blender or food processor. Add garlic cloves and half the lime juice. Pulse until thoroughly combined.
  2. Dice remaining tomato into evenly sized small pieces. Stir into tomato garlic mixture to create a chunkier texture. Stir in 1 to 2 tablespoons of fresh cilantro (adjust according to personal preference).
  3. Add remaining lime and season with salt and pepper, to taste.
