Soft and chewy Banana Pudding Cookies made with ripe banana, banana cream pudding mix, brown sugar, and white chocolate chips for a sweet treat packed with banana flavor.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
Add the mashed banana, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, instant banana cream pudding mix, and baking soda.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the white chocolate chips.
Lightly coat your hands with vegetable oil to prevent sticking. Roll the cookie dough into balls and place them on the prepared baking sheet about 1 inch apart.
Bake for 10–12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
