Fennel Orange Avocado Salad

With the bright notes of citrus, this fennel orange avocado salad is light and delicious. You may have seen similar salads before but we think the addition of the avocado really takes it to the next level.

Ingredients

  • 2 fennel bulbs trimmed and sliced lengthwise
  • 4 seedless oranges peeled and sliced
  • 1 large avocado peeled, pitted and sliced or diced
  • 1 cup fresh mint leaves rinsed, dried, and sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp honey
  • Juice of one lemon
  • Freshly ground black pepper and sea salt to taste.
  • 1/2 cup pumpkin seeds
  • Optional: delicious with the addition of half a red onion or sweet onion sliced too!

Instructions

  1. Mix together the fennel, orange, avocado, and mint.
  2. Whisk together lemon juice, olive oil, and honey, and then gently toss with the fennel mixture.
  3. Season with sea salt and freshly cracked black pepper to taste.
  4. Sprinkle the pumpkin seeds over the salad.
