Ingredients
2fennel bulbstrimmed and sliced lengthwise
4seedless orangespeeled and sliced
1large avocadopeeled, pitted and sliced or diced
1cupfresh mint leavesrinsed, dried, and sliced
2tbspextra-virgin olive oil
1tbsphoney
Juice of one lemon
Freshly ground black pepper and sea salt to taste.
1/2cuppumpkin seeds
Optional: delicious with the addition of half a red onion or sweet onionsliced too!
Instructions
Mix together the fennel, orange, avocado, and mint.
Whisk together lemon juice, olive oil, and honey, and then gently toss with the fennel mixture.
Season with sea salt and freshly cracked black pepper to taste.
Sprinkle the pumpkin seeds over the salad.
