Our family gets together more often in the summer and when we do, you can almost guarantee that my niece's Easy Creamy Tortellini Salad Recipe will be making an appearance. You won’t believe that something so quick and easy to make can be so incredibly delicious.
Start with premade tortellini (fresh or frozen), add a few ingredients and in less than 10 minutes of preparation time, you have a yummy summer pasta salad that can be served as a main dish or side dish.
Pro Tip: I find that the frozen peas (the larger size not the tiny ones) work the best. They have a slightly firmer texture to them that holds up well to being mixed through the salad. I put them in while still frozen and by the time we serve the salad, they’re thawed.
To speed up cooling down the pasta so you can make the salad: Lay it out on a tray or baking sheet so every piece is being exposed to the air.
