Bacon Wrapped Asparagus

I just love when asparagus comes into season.  It’s one of my favourite vegetables!  This bacon wrapped asparagus recipe is a scrumptious way to use it.

Wrap asparagus in bacon and glaze it with this delicious sauce to make a side dish that goes well with pretty much any main dish.

Ingredients

  • 1 bunch bunch of asparagus
  • 1/2 lb. bacon
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/4 tsp garlic
  • 1/4 tsp soy sauce

Instructions

  1. Divide the bunch of asparagus into bundles of 3-4 stalks each.
  2. Wrap each bundle in a piece of bacon. I find the bacon cooks more thoroughly if it doesn’t overlap on itself.
  3. Place the bundles on a baking sheet or in a roasting pan. I find it best to line it with non-stick aluminum foil or to spray it with non-stick cooking spray.
  4. In a saucepan, simply mix together 1/2 cup butter, 1/4 cup brown sugar, 1/4 tsp. garlic powder, and 1/4 tsp. soy sauce in a saucepan over low to medium heat.
  5. Once melted, brush this mixture over each bundle until each one is coated with the glaze.
  6. Place in a 400 degree F oven for 20-25 minutes, until the asparagus and bacon are cooked.
