Grilled Cuban Style Pork Tenderloin

We love this grilled variation on Cuban style pork tenderloin. It's so easy to make and incredibly tasty. Eat it as is or use it in Cuban sandwiches.

I also like to use this pork in taco bowls. I use the soft taco bowls from Old El Paso and layer in some cut up pork tenderloin (from the recipe below), lettuce, onions, tomatoes, and cilantro. Top with a honey lime vinaigrette.

Ingredients

  • 1 1/2 lbs. pork tenderloin
  • 4 cloves of garlic cut into thin slices
  • 2 T. grated lime peel
  • 1 T. olive oil
  • 2 tsp. fresh lime juice
  • 1/2 tsp. honey
  • Salt and pepper to taste
  • Fresh herbs like tarragon rosemary, or thyme if desired

Instructions

  1. Make slits in the top of the tenderloin and place the pieces of garlic in these slits.
  2. Stir together the peel, oil, lime juice, honey, salt, and pepper.
  3. Brush this mixture over the tenderloin and allow to sit and marinate a bit while the grill heats up.
  4. Place the tenderloin on the grill over medium heat or coals and cover the grill.
  5. Grill for about 20-25 minutes turning and basting several times.
  6. A meat thermometer inserted in the center of the tenderloin should read 160 degrees F when the tenderloin is done.
