Halloween Mummy Meatloaf

We love Halloween and we love silly Halloween foods! One of our new favourites is this Mummy Meatloaf recipe. It's so easy to make and so cute!

Ingredients

  • 2/3 cup of cubed pieces of bread
  • 2/3 cup of milk
  • 1 lb. ground beef
  • Salt and pepper as desired
  • 1 egg
  • 1/2 cup ketchup – set aside 2 tablespoons of this amount
  • 1 tablespoon brown sugar
  • 1.5 teaspoons mustard
  • 8 ounces lasagna noodles
  • 1 3- ounce mozzarella ball
  • 2 pitted large black olives

Instructions

  1. Preheat oven to 350 degrees F.
  2. Use cooking spray to lightly coat a baking dish – I found that a 10-inch round dish or 10 by 13 inch rectangular dish works best.
  3. Place cubed bread in a bowl and pour milk over it. Allow to stand for a few minutes so the milk can soak in.
  4. Add the ground beef, salt and pepper, egg, and 2 tablespoons of ketchup. Combine until just mixed together. Don’t overmix.
  5. Form into a round or oval shape to make the mummy’s head.
  6. Mix the remaining ketchup, brown sugar, and mustard together. Spread this over the meatloaf.
  7. Bake the meatloaf for 50-60 minutes. Remove from oven.
  8. Cook the lasagna noodles according to package directions.
  9. Place the lasagna noodles over the meatloaf, criss-crossing to resemble the bandages on a mummy. Cut the cheese ball in half and put each half in place as the eyes, adding the olives to the centers.

Recipe Notes

Variations:

1) Cut some pieces of onion to resemble teeth. When forming the meatloaf, create a mouth shaped indentation and firmly stick the teeth in place. As you add the pasta "bandages", be sure to allow some of the teeth to show through.

2) Substitute marinara sauce for the ketchup/mustard/brown sugar mixture. Omit the ketchup mixed into the ground beef as well. Add some Italian seasoning. Use strips of bacon in place of the pasta to make it look more like a zombie than a mummy.
