Ingredients

  • 1 medium onion chopped
  • 1/2 cup celery minced (note: you can just chop it but I am not fond of a really obvious celery taste so I mince it instead)
  • 2 tbsp oil
  • 4 pork chops
  • salt and pepper to taste
  • 1 1/2 cups water
  • 2 tbsp brown sugar
  • 16 oz. tomato sauce
  • 1 cup uncooked rice not instant

Instructions

  1. Saute the onions and celery in the oil until softened and translucent.
  2. Add the pork chops and cook until brown on both sides.
  3. Remove the chops and add the water, brown sugar, salt, pepper, and 3/4 of the tomato sauce to the skillet.
  4. Bring this to a gentle boil. Add the rice and stir.
  5. Put the chops back into the skillet with the rice mixture. Pour the rest of the tomato sauce over the top of the chops and rice.
  6. Cover the skillet and turn the heat to simmer. Simmer for 15-20 minutes until the rice is done.
